The Peckish Egg Sammie

This is picnic fuel at its finest, folks. Egg-cado heaven encased in two slabs of multi-grain comfort. Everyone’s throwing their money at these from New York City to Bondi Beach.

BUY IT:

2 slices of bread (ideally something think and hearty, like multigrain)

1 PECK Pack (we love Everything)

1 avocado, smashed

1 juicy heirloom tomato, sliced

Romaine lettuce

Red onion, thinly sliced

Red pepper flakes

Lemon 

Salt and Pepper

 

MAKE IT:
  1. Toast two slices of bread of your choice.
  2. Lightly smash ripe avocado in a bowl. Add a squeeze of lemon, a sprinkle of red pepper flakes, and your Peck Pack dip (and/or a healthy dash of salt and pepper). Mix thoroughly.
  3. Assemble sandwich. Slather avocado on the bottom piece of bread. Stack layers of tomato, romaine lettuce, sliced Peckish eggs, sliced red onion, and more avocado.
  4. Add top slice of bread to seal the deal.
